The menu at Foundry & Lux, in continuing the theme of industrial-meets-modern, uses simple and high-quality ingredients which are then composed in unique ways to convey a casual elegance. From seasonal produce to whole-animal cooking, dishes are driven by sustainable and locally-sourced, ingredients including humanely raised meat, certified cage-free eggs, and seafood that meets Monterey Bay Aquarium’s Seafood Watch guidelines.
